5 Ingredient Blueberry Crumble {v+gf}


This may be the easiest recipe I've ever posted!  It also happens to be delicious and quite healthy for dessert . . . And if that doesn't get your attention, I don't know what will! :-)  


WHAT YOU NEED:

INGREDIENTS

  1. berries
  2. coconut sugar
  3. Udi's Gluten Free Granola
  4. vanilla
  5. lemon

optional:

  • cinnamon
  • dairy free, vanilla ice cream

The inspiration for this beautiful dessert came from a late night walk around my kitchen (while craving something sweet).  I didn't have my go-to dark chocolate and I was lacking significant brain power to make anything complicated.  I noticed a little bag of Udi's Gluten Free granola, sitting quietly on my kitchen table.  Suddenly, flash photos of delectable crumbles I've admired on Pinterest and infamous food blogs came pouring into my mind.  I thought to myself, there you are my little crumble.  Simple, easy and ready to go!  The rest is history. 

Keep reading for the step by step instructions and printable recipe!


Step 1

Mix blueberries with coconut sugar, lemon, vanilla, and (optional) cinnamon.

Place berry mixture in muffin or mini pie pan.



Step 2

Top with Udi's Gluten Free granola.



Step 3

Bake in oven at 375, for about 25 minutes.



Step 4

Remove from oven.

Scoop crumble into serving bowls.



Step 5

Serve with dairy free ice cream!

VEGAN + GLUTEN FREE

makes: 6 mini pies

total time: 30 min

INGREDIENTS

  • Udi's Gluten Free granola
  • 4 cups fresh berries (I used blueberries)
  • 2-4 Tablespoons coconut sugar (or sweetener of choice)
  • 1 teaspoon vanilla extract
  • juice from 1/2 of a lemon
  • optional: 
    •  1 teaspoon cinnamon

For serving: top with dairy free, vanilla ice cream (I used this)

INSTRUCTIONS

  1. Preheat oven to 375 degrees.  
  2. Mix blueberries with coconut sugar, lemon, vanilla, and (optional) cinnamon.  Place berry mixture in muffin or mini pie pan.

  3. Top with Udi's Gluten Free granola.
  4. Bake in oven for about 25 minutes.
  5. Remove from oven.  Scoop crumble into serving bowls and serve with dairy free ice cream!
