With Memorial Day right around the corner, it's easy to get food festive with the red, white and blue store-bought frostings. But don't forget, plenty of natural foods, even healthy ones like blueberries and strawberries, will do the job just fine! Scroll to the bottom for this delicious Roasted Berry Breakfast Tart recipe!
WHAT YOU NEED:
TOOLS
Mixing bowl
Foil or cookie sheet
Pizza cutter or knife
INGREDIENTS
Mixed berries
Coconut sugar
Strawberry jam
Optional: powdered sugar
Optional: homemade, coconut whipped cream

Roasted Berry Breakfast Tart {v+gf}
VEGAN + GLUTEN FREE
makes: about 2, 6 inch tarts
total time: 25 min
INGREDIENTS
Roasted Berry Breakfast Tart:
- Gluten free pizza crust
- 2 cups fresh, mixed berries
- 1/4 cup coconut sugar
- Strawberry jam
- Optional: powdered sugar
- Optional: homemade, coconut whipped cream
Coconut Whipped Cream:
1 can full fat coconut milk - chilled overnight (solid part) or coconut cream
3-5 Tbsp maple syrup or sweetener of choice
1/2 tsp pure vanilla extract
INSTRUCTIONS
- Preheat oven to 400. Line baking sheet with parchment paper or I made a couple lightly greased, cooking sheets out of foil - just large enough to fit around the 6 inch pizzas
- Prepare pizza dough for 2, 6 inch pizza/tart crusts per instructions.
- Combine berries and sugar in a mixing bowl; lightly stir and let stand 5 minutes.
- Cover top with strawberry jam first, then berry mixture second. Leave about 1/2 inch of crust (like a pizza).
- Bake for 18 to 20 minutes, or until golden brown.
- Remove and let stand few minutes. Dust with powdered sugar, cut and serve.
SUGGESTIONS
- Serve as a breakfast pastry or dessert
- Serve as sweet treat for a Memorial Day BBQ
- Involve the kids in making the tart. It's so easy and you can call it a strawberry pizza or whatever gets them excited ;)
