Homemade salad dressing
If you're unfamiliar with arugula, it has a very unique, pungent and almost peppery flavor. Often overshadowed by green superstars like kale and chard, arugula also has an impressive nutritional profile! According to livestrong, arugula contains about eight times the calcium, fives times the vitamin A, vitamin C and vitamin K, and four times the iron as the same amount of iceberg lettuce . . . I don't know about you, but I'm sold!
WHAT YOU NEED:

arugula
pine nuts
lemon juice
olive oil
salt & pepper
optional: parmesan

Arugula Salad
SIMPLE SALAD SERIES

INGREDIENTS
- arugula
- pine nuts
- optional: parmesan
Dressing
- 1/2 cup olive oil
- 1/4 cup lemon juice
- 1/2 t salt
- 1/4 t fresh ground pepper
INSTRUCTIONS
- Mix dressing: olive oil, lemon juice, salt, and pepper.
- Toss arugula with desired amount of dressing and shavings of parmesan.
- Garnish with pine nuts, parmesan, and more salt and pepper (if desired).
