Every Friday, my dad,  husband, and I have a special little "breakfast club."  It's normally just the three of us, so we meet at one of our favorite neighborhood spots called The Henry.  We spend about an hour or two drinking coffee, eating breakfast and talking about life . . . 

Spending time with loved ones is my favorite thing to do, so I look forward to this time every week.  I'm fortunate to have a wicked smart father and husband, so breakfast is not only a time to visit, but often a source of inspiration ;).

The three of us are creatures of habit (and way more alike than we'd like to admit), so our breakfast orders rarely change.  My dad and Marek get the same egg breakfast - Dad's eggs are over medium and Marek's eggs are poached.  I generally confuse one of the workers, trying to create a healthy, gluten free option that doesn't really exist.  p.s. I suggest ordering the "The Cleo" coffee drink!

Since I'm creating my own meal at the restaurant, I decided to make my breakfast tacos outside of The Henry as well.  So here you have it, my favorite custom Quinoa Breakfast Tacos inspired by my Fridays with "The Breakfast Club."

Quinoa Breakfast Tacos

BREAKFAST

GLUTEN FREE, SOY FREE

INGREDIENTS

EGG QUINOA MIX

  • 3 green onions
  • 1 jalapeño
  • 1/2 cup chopped peppers of choice
  • 8 eggs whites
  • 1 cup quinoa, cooked
  • 1/2 cup black beans
  • 1/2 cup corn
  • 1/2 cup cilantro
  • 1/2 cup cheese (from grass fed cows, vegan - leave out)
  • 1/4 teaspoon salt and pepper

TACOS

  • 9 corn tortillas

OPTIONAL TOPPINGS:

  • salsa
  • greek yogurt (leave out for dairy free)

INSTRUCTIONS

  1. PREP:

    • Cook quinoa according to instructions.

    • Chop green onions and all peppers - combine in separate prep bowl.

    • Egg mixture: Whisk egg whites and cheese in separate prep bowl

    • Quinoa Mixture: Mix quinoa, black beans and corn in separate prep bowl

    • Chop cilantro.


Today also happens to be my dad's birthday, so Happy Birthday to Cornelius Sean Murphy, the jolliest Irishman I've ever known!
