It's easy to buy granola bars, yes . . . But by golly, it's pretty easy to make them too. On average, you will save about $.10 per granola bar by making them at home and it's likely you have most ingredients in your pantry already. Make a batch or two to snack on for the week ahead; these guys are totally addicting!

Oatmeal Chocolate Chip Granola Bars

VEGAN, GLUTEN FREE, SOY FREE, CORN FREE

INGREDIENTS
- 2 cups gluten free oats
- 1 cup crispy rice cereal (I used THESE and found them at Sprouts)
- 1/4 teaspoon pink Himalayan salt
- 1/4 cup coconut oil
- 1/4 cup brown rice syrup
- 1/4 cup coconut sugar or honey
- 1 teaspoon vanilla
INSTRUCTIONS
Line baking or glass dish (8x8 or 9x9) with parchment paper.
In large bowl mix oats cereal and salt.
In small pot, melt coconut oil, brown rice syrup and coconut sugar. When it starts to boil, reduce heat to med/low and cook for 4 minutes (minimal bubbles, stirring often).
Turn off heat and add vanilla. Pour liquid mixture into dry mixture and combine. Spread mixture evenly into dish and cover with parchment paper. Push down with hands until mix is packed verytightly
Bake at 325 for 25 minutes. Let cool completely. Lift parchment paper out onto cutting board and slice 12 bars.
