mixed greens (I like kale, spinach & arugula)
chickpeas
paprika
lemon
marcona almonds
dressing:
- olive oil
- lemon juice
- white wine vinegar
- sea salt & pepper

Crispy Chickpea Kale + Spinach Salad
SIMPLE SALAD SERIES

INGREDIENTS

1 Tablespoon coconut oil
-
8 cups mixed greens (I like kale, spinach & arugula)

1 can chickpeas
-
1 Tablespoon paprika
-
juice of 1 lemon
-
1/2 cup marcona almonds
Dressing:
-
2 Tablespoon olive oil
-
juice of 2 lemons
-
2 Tablespoon white wine vinegar
-
1/4 teaspoon sea salt & pepper
INSTRUCTIONS
- Mix salad dressing and set aside.
- Mix together chickpeas, paprika, lemon juice, marcona almonds and a pinch of salt.
- Warm coconut oil over medium/high heat. Pan fry chickpea mixture until crispy. Let cool for a few minutes.
- Dress greens and toss with salad dressing. Top with crispy chickpea mixture.
