My fiance, Marek, just loves mixing ALL of his food together. I, on the other hand, love to taste each ingredient individually and savor how they accent each other together. It's so bad that I don't even like buffets because they serve different kinds of food in the same sitting!
Needless to say, when Marek came to me with the idea of the "morning after" Thanksgiving benedict full of leftovers from the night before, I needed a bit of convincing.
But, after brainstorming a few different ideas, we came up with the perfect "morning after" bennie, full of some of our favorite ingredients from Thanksgiving! And since it's Marek's creation, we left the turkey in :D
LEFTOVER BENEDICT
total time: 15 min
INGREDIENTS
- mashed potatoes
- cranberry
- stuffing (we had vegan stuffin muffins leftover)
- turkey (*optional)
- egg(s)
- gravy (*optional)
Mini Mashed Potato Pancake (makes about 10):
- 3 cups mashed potatoes
- 1 egg (or egg sub)
- 1/2 cup oat flour (optional)
INSTRUCTIONS
- Make potato pancakes: Mix mashed potatoes with egg and flour. Use about 2 tablespoons of the mixture for each mini pancake. Place mixture in mini pancake pan or on griddle/skillet, etc.
- Re-heat leftovers listed above & poach egg(s). Place one ingredient on top of the other from bottom to top in this order: potato pancake, cranberry sauce, stuffing, turkey, then top with gravy.
