Homemade Halloween Series: VEGAN SNICKERS {5 Ingredients}

As promised, The Homemade Halloween Series HAD to deliver the classic trick or treat candy bar . . . SNICKERS of course!   

When I was younger, my Grandma Barb had a HUGE jar of snickers (generally on the top shelf somewhere) and my cousins and I did whatever it took to reach this prized jar of goodies.  Climbing countertops, finding random objects to use as ladders . . . You name it, we did it!  

As an adult, I tend to jump through hoops looking for healthy recipes of my old favorites.  But either way, I am still jumping through hoops for sweets!  

I hope you love this vegan snickers recipe the way I do.  You will sacrifice NOTHING in the flavor category, but reap the health benefits of 70% + dark chocolate, peanuts, walnuts, dates, etc!  I have been sneak eating them from the freezer all week :D

VEGAN SNICKERS {5 Ingredients}

Total time: 30 mins

Serves: 8

INGREDIENTS

  • 18-20 pitted dates (about 1 cup)
  • 1 cup raw walnuts
  • 1/4 cup vegan caramel sauce, (homemade recipe here)
  • 1/4 cup roasted salted peanuts
  • 8 ounces (1 cup) dark chocolate 70% +, chopped (non-dairy)

INSTRUCTIONS

  1. Pulse dates in a food processor until only small bits remain.  Add walnuts and pulse until thoroughly mixed and a “dough” is formed.
  2. Transfer dough to a small loaf pan lined with parchment paper and press into a square about 1/4 inch thick.  Freeze dough for 5 minutes.
  3. Remove from freezer and transfer to a cookie sheet. Carefully slice into 8 even rectangles.  
  4. Top with caramel sauce and add peanuts. Freeze for 15 minutes to harden.  Ten minutes into freezing, melt the chocolate in a shallow bowl.  
  5. When set, remove bars from freezer and carefully dip each one into the chocolate.  Scrape off excess with a rubber spatula.  Using a spoon, drizzle a generous amount of chocolate on top of each bar to coat bar with chocolate.
  6. Place bars on a baking sheet lined with plastic wrap or parchment and place back in freezer to set for at least 10 minutes. 

STORAGE:

Store in the freezer or fridge to keep fresh until serving . . . I'm a snickers in the freezer kinda gal - fo sho!  :D  Keeps in freezer for about a month.
