Oh, and did I mention these bad boys happen to be gluten-free and vegan? You can thank me later ;D It's kinda like a breakfast apple pie . . . And who doesn't like pie for breakfast?!
If you want to fancy it up, try layering the pancakes in a mason jar with the apples in between. It's super easy to do, but a quick way to impress your guests.
Apple Maple-Glazed {Vegan} Pancakes (serves 2-4)
Total Time: about 20 min
INGREDIENTS
- 1 mashed banana
- 1 cup unsweetened almond milk
- 6 tablespoons flaxmeal
- 6 tsp coconut oil, divided (3 & 3)
- 1 cup oat flour
- 1/2 cup orange juice
- 1 tsp baking powder
- 1 tsp ground cinnamon
- pinch of salt
Topping:
- 1 tablespoon vegan butter, plus more for serving
- 2 apples, peeled and sliced
- 1 tablespoons water
- 1/4 cup maple syrup
INSTRUCTIONS
- In a bowl , combine banana, almond milk, flaxmeal, and 3 tsp coconut oil. Let stand until thick about 10 minutes.
- Whisk in oat flour, orange juice, baking powder, cinnamon and a pinch of salt.
- Heat 2 tsp oil in a cast iron skillet over medium heat. Spoon 1/4 cup batter onto skillet and flatten into 3 inch rounds with a spatula. Cook until golden, flipping once, about 6 minutes each side.
- Heat a large skillet over medium heat, melt 1 tablespoon vegan butter, and add apples, stirring to coat until starting to caramelize. Add the water, cooking until water has evaporated and apples are tender, about 4 minutes.
- Pour in the maple syrup and a dash of ground cinnamon; simmer for a minute to combine.
- Top pancakes with apple maple glaze and some additional warm maple syrup or maple agave nectar.
