I don't know about you, but I'm starting to feel that cool breeze in the early mornings! And you know what that means . . . Fall is coming!
One of the first things that comes to mind during the Autumn season is Notre Dame football games and the beautiful falling leaves around South Bend, Indiana (a.k.a. my hometown). I can already smell those BBQs smoking and hear the band playing the fight song!
This Pear, Grape & Pecan Salad is the perfect Fall transitional salad. Not something you will necessarily bring to the tailgate party, but definitely a great starter for the viewing party! Check out the recipe below!
PEAR, GRAPE + PECAN SALAD (serves 2)
INGREDIENTS
- 2 Cups Spinach
- 2 Cups Mixed greens
- 1 Pear
- About 10 Grapes
- 1/4 Cup Pecans
- 1/4 Cup Gorgonzola
- Dressing: I love a Poppyseed Vinaigrette or Trader Joes Pear Champagne Vinaigrette
INSTRUCTIONS
- Chop pears and grapes.
- Toss greens with dressing.
- Top with pears, grapes, pecans and gorgonzola.
